Hi, I'm Chef Maria Liberati, Author of The Gourmand World Award-Winning Book Series, The Basic Art of Italian Cooking. I'm here in the Kitchen Showroom of Gehman Design and Remodeling in Harveysville, PA. And today, I have a recipe for a cheese frittata. We're taking three eggs, half a cup of mozzarella cheese shredded; you can use any cheese that you like; a pinch of salt, a pinch of pepper. And I'm going to whisk my three eggs together until they're nice and well-blended. Place in my cheese, shredded cheese. As I said, you can use any kind of cheese that you like. You can even use two cheeses. A pinch of pepper, a pinch of salt. I'm going to just mix this slightly together with a wooden spoon. My frittata is ready to go, we're ready to go to the pan. I am pouring our three eggs into the pan and always use a non-stick pan. What we're going to do is let this cook. Now, you can also put this in the oven if you'd like so that the top browns. But, we're going to turn it over. Okay, I just made a successful flip of my frittata which isn't always easy to do. And now, I'm going to let the other side cook. You can see the other side, the flip side was, is brown. So, we're just going to let the other side get nice and firm, probably about five minutes. You just want the frittata nice and firm so it comes out really nicely onto the plate. And we're going to plate this wonderful cheese frittata. And there it is, the cheese frittata. It's a recipe for cheese frittata and I'm going to top it with some more cheese. You can do this to make a nice presentation; some minced parsley and there you go.
