Hi. I;m Jackson Lamb at the Hospitality Learning Center at MSU Denver. Today, we're going to take a look at creating pesto and Gorgonzola steaks. Well there's a couple of big words. Let's define them. Pesto, that's an Italian sauce. It's made from olive oil, basil and pine nuts and that is pureed. We add a little salt and pepper in there. Gorgonzola is a blue cheese that comes from Italy. So what we're looking to do today is we're going to take our steak, we're going to pan sear it in our cast iron pan. We're going to cook it for two minutes on each side. Okay? At the time of service, we're going to remove it to a clean plate. We're going to do a smear of pesto across the top and we're going to sprinkle Gorgonzola cheese crumbles across the top. So let's get started. I'm going to start with this steak. We're going to go ahead and we're gong to pick this up and put it in to our pan. There we go. Nice and hot. And as that's starting to simmer up, I'm going to get ready here with my pesto and I've got my Gorgonzola. I need to let this go for about two minutes on each side. I only want to flip it once. This will ensure that the meat gets seared and I'll ensure that it wil good all the way through to my liking. And we're trying to come up with a medium rare steak today. Alright. I can see on my steak, I got a great sear on the one side, nice color, dark brown if you will. We're going to let this go for about another minute and a half, two minutes. Meanwhile, I got my Gorgonzola cheese and I got my pesto ready to go. So my steak is almost done here. I'm just making sure that I've go good color on both sides. I'm going to remove my steak from the pan. Going to put it on our plate right here. Turn the pan off. Let's come over here. I'm going to take my pesto and I'm going to do a quick smear on the back of the steak here. And that basil and that garlic is all going to be drawn in to the steak. And we're going to top this with blue cheese crumbles. Alright. That is beautiful. And that, ladies and gentlemen, is how we make a pesto Gorgonzola steak. I'm chef Jackson Lamb.
