Hi, I’m Teca Thompson, Farm-to-Table chef. Today, we’re talking about how to decoratively cut pineapple. So, I’m going to do a few different examples. Here, I have a peeled pineapple with the core still in it. So, I’m just going to take a peeler – you don’t want to use a pineapple corer, because you don’t want it to be pre-cut into wedges. So, I’m just going to take my apple peeler, and I’m just going to kind of go around the core in the middle, trying to loosen that up so I can just pop it right out. Maybe do the other side, like so. Make sure it’s loose, so hopefully I can slide it right out. Perfect. And, there we go, beautiful piece of slice. So, this is like a classic way for fruit plates or whatever, and you just want to really, really thinly slice it. And, you get these nice, beautiful, delicate slices. You can also do these in halves if you want to have smaller. So, that’s one really good way. Then, just makes these beautiful slices that are great – also good for putting on ham or meats. And now, I have some wedges of pineapple that I’ve previously cored and peeled. And, these are really good for making little triangle squares for eating. Or, you get a little wedge, you take your knife and make a half insert, and they’re perfect for garnishing a glass for juice or cocktails. So, let me just cut a few more wedges.
