Hi, I’m Farm-to-Table Chef Teca Thompson, and today we’re talking about how to season your griddle. So, first you’re going to want to wash it with soap and water. After it’s seasoned, you never really want to wash it with soap, because that would strip away good oils in the fat. But, right now, we’re just going to take it to the sink and wash it with warm, soapy water. Alrighty, and then we’re going to take it back here, and we’re just going to dry it off really well, making sure it’s all dry, inside and out, like so. Next, you want to have a cooking oil or coconut oil – something with a high heat index. And, we’re just going to take about a tablespoon of oil, I’m going to pour it into the pan, like so. Okay, and then we’re going to take a paper towel, and we’re just going to rub the oil all over the pan, making sure that there’s oil everywhere, but it’s a light coating so that it doesn’t overdo or get sticky. Here we go. So, I preheated my oven to 400 degrees, and on the bottom rack, I’ve put tinfoil, and I’m going to flip the pan like this so the oil can heat all the way around but so it doesn’t get pooled or caught in the griddle part right here. So, the 400 degree oven with the tinfoil on the bottom rack – and that’s to catch the dripping – just place my griddle like this. So, I’m going to let that cook and season itself for about 45 minutes to an hour, and then I’m going to take it out and start the process again. And, this is the process of seasoning a griddle, so what you’re basically doing is you’re cooking in layers of good fat that’s going to almost make it non-stick for your future cooking.
