Hi, I'm Barbara Kirshner a lot of people know me as Ms. Barb, I'm an expert food coach who teaches kids and parents healthy eating. I develop recipes and teach cooking classes, develop products and do healthy eating birthday parties, but most of all I like to have fun, fun, fun with food. This is my friend Sonya and she wants to learn how to make healthy whole wheat blueberry cupcakes. Now as you know all my recipes are super easy, right? Quick and easy, not too many ingredients, goes together quick, don't take a mixer most of the time, just really mix it up and good to go in the oven, boom! Alright, so we have, sense you wanted whole wheat, we have one and a third cups of whole wheat pastry flour, we put that right in and we have one cup of sugar, this is the all natural sugar, then we have a teaspoon of baking powder and a quarter teaspoon of salt. So I just mix that up. We're going to take a half cup of milk, a quarter cup of water, a quarter cup of canola oil, 2 tablespoons of natural all fruit spread, just fruit, we have our vanilla and 1 egg. And then I am going to mix that up. Then I am going to pour the liquid ingredients into the dry ingredients and then stir it up. How easy is this? These recipes are so easy the kids can help you make them. We're going to take a tablespoon of the batter and put it in our little cupcake paper, I like for one or two bite, depending on how old of a kid you are. This makes a lot of miniature cupcakes. So you can make a bunch of them, freeze them, great to have at a kids birthday parties, great to have at adult gatherings, really great on a cookie tray with cupcakes. And cupcakes are really the big thing these days. And these are as you see very healthy. Then ready to go into a preheated oven at 350 degrees and they bake for about 15 to 20 minutes or until a cake tester inserted in the center or a wooden pick comes out clean. So what's a blueberry cupcake with out blueberry frosting? So in this bowl I mixed together some low fat cream cheese, a little bit of butter and some confectioners sugar. Now in to this I'm going to put 2 to 3 tablespoons of the all fruit jam or spread. To add a little moisture and to give you the blueberry color, you can make this any color if your doing something different than blueberry, just switch up the jam and you can make strawberry or anything you want. What I like to do is I like to take the cupcake and just kind of twirl it around and see how easy this is to frost? Less of a mess. I take some fresh blueberries and I decorate, sometimes I put one, sometimes I put more than one. of course you can make them different colors, you could have blueberry frosting and you put a strawberry and you can put a chocolate chip, anything you want. And Sonya that's how you make whole wheat blueberry cupcakes. Me Barb, these are the best blueberry cupcakes I've ever had. That is great.
