Hi, I'm Barbara Kirshner. A lot of people know me as Ms. Barb. I'm an expert food coach who teaches kids and families healthy eating. I develop recipes, teach cooking classes, develop products and do healthy eating birthday parties. But most of all, I love to fun, fun, fun with food. This is my friend Sonya who wants to learn how to make a heart healthy snack cake. And guess what, Sonya. What Ms. Barb? This cake is vegan as well. Awesome. All right, well, where do we start? OK. Did you wash your hands? I did. OK. I am all set too. Now this cake is very easy to make. As you all know, I like using quick and easy recipes that I develop that don't use too many pots, too many pans, too many bowls, just mix it together, good to go. As quick as a cake mix I think. I have one and three quarters cups of flour. It's a combination of unbleached white flour and whole wheat flour. I'm going to put all of my dry ingredients in the bowl. Cup of brown sugar, quarter cup of cocoa. I have my baking soda, which is one teaspoon. I have a quarter teaspoon of salt. And that's it on my dry ingredients. And then just mix it up because sometimes the brown sugar gets a little clumpy. So you want to kind of mix it up although it will dissolve with the wet ingredients. Then I'm going to add some water. One cup and some apple sauce. One tablespoon. That's unsweetened applesauce. And I am going to add a quarter cup of canola oil. Some vanilla. That's a teaspoon. Or you can use a half a teaspoon depending on what you want. And you mix it up. This is even good without the vanilla if you don't have it on hand. Quick, quick, quick, quick, quick. No mixer. Smells great. Now I'm going to spray my pan with non stick cooking spray and then just get the batter in the pan. How quick was that? Maybe that took ten minutes? Not really. It took maybe three. This is a great cake to snack, great for even company. No eggs, no milk. And you can just bake it like that if you want to frost it or not. Great snack cake like that. Or I like it a little bumpy and a little extra chocolate. So I put a half cup of chocolate chips. If you want to keep it vegan, use vegan chocolate chips. If that doesn't make a different to you, use regular chocolate chips. OK. We're going to put this in a 350 degree oven for 35 to 40 minutes or until a cake tester inserted in the center comes out clean. Then you take it out and cool it on a wire rack. It's cool and ready to try. Are you ready? I am ready. You don't need a big piece of this because you wouldn't believe how fudgy it is. OK that's the best vegan cake I've ever tasted.
