Hi, I'm chef Tony Hedger from L'Ecoe Culinaire in Saint Louis, Missouri. Today, we're going to talk about how to keep meat from drying out in your beef stew. One of the reasons why beef dries out is because you're not using a good cut of meat. The other reason is you're not using or bringing the moisture level up about an inch above the protein or the meat. Very, very important that keeping the meat submerged in a hot liquid is going to help break down the tissues of the meat. It's going to make it a little bit more tender but it's also going to keep it from being dry. Doing that initial sear on a beef stew will also help keep moisture in so it doesn't escape out of your beef stew.
