Hi. I'm chef Tony Hedger from L'Ecole Culinaire in Saint Louis, Missouri. Today, we're going to kind of fix if you get a sour taste in your beef stew I'm going to show you how to fix that real quick. OK there's only one of two reasons why a beef stew would have a sour taste to it. First of all, your meat wasn't exactly fresh, which we shouldn't be doing beef stew if it's not exactly fresh. Second of all, there was impurities in that meat that we didn't get off before. OK. So I'm going to tell you how to fix that. You should see a little bit of scum that would be floating on top of the water or on top of your stock on top of your tomato juice, whatever you have in there. So what you do is you take a ladle and you skim all those little impurities off. Once you have all those little impurities off, and you don't see any more scum floating on top of the water because that's exactly what it'll be, then come back and give your stew another taste.
