Hi, I’m Michelle Dudash, author of “Clean Eating for Busy Families,” and today I’m going to show you how to make a mango and guacamole salad. So, the ingredients for this dish: We have three avocados, we have mango, cilantro, green onions, jalapenos, garlic powder, chili powder, and lime juice. Now, with avocados, all we’re going to do is mash these up. And, when it comes to avocados, you can just throw in halves or quarters. And, I like to use a whisk, which really makes it efficient. And, I like my guacamole a little chunky, so I’m going to leave a few larger pieces of avocado in this recipe. Alright, so, that’s looking great. Alright, now it’s ready to add the rest of the ingredients. We have our diced mango, and then we have just the rest here, cilantro. And, you know, mangoes are really great in this, because normally you would use something like diced tomatoes. But, the mangoes are great, they’re free of fat, cholesterol and sodium, and just one cup provides 100 calories. And, of course, they taste delicious. Alright. And, now, when it comes to the salt, just do that to taste. You can just – depends on how salty your chips are. And then, I like to add, of course, a little pepper. And then, we just stir this all together. Just amazing flavors in this, great for a snack, great to bring to a potluck, great to make for game day. I love guacamole salad. Now, you just serve this with some tortilla chips, dip away, and here is your mango and guacamole salad. I’m Michelle Dudash, your clean eating expert.
