Hi, I'm Michelle Dudash, author of Clean Eating for Busy Families, and today I'm gonna show you how to make walnut mango salad. Mangoes are power packed with antioxidants beta carotene and Vitamin C and contain over 20 different vitamins and minerals. So when we're making the salad the first thing we do we have in our bowl is baby spinach and then what were gonna add is some blue cheese, some tomatoes and scallions, and just a pinch of salt. Now the blue cheese is delicious, it has that nice pungent flavor that we love and then we add just a pinch of salt and then our dressing for this is very simplistic, we have some extra virgin olive oil, some white wine vinegar, and fresh cracked pepper. Now when I'm making a salad or when I'm cooking and using pepper I always fresh black pepper, that is just an absolute must. It just has such better flavor than the stuff that I get out of the jar. Then we just toss this together, just to coat the lettuce evenly and flavor every bite and then we'll plate this and this is great for a lunch entree, for a dinner entree, keep you light on your feet, we have our beautiful diced mangoes that are on top which are beautiful garnish and then we also have our walnuts that we put on top, our crushed walnuts, and then also adding some proteins and some important Omega 3's that are really great for our diet and of course great crunch, and that's how you make a walnut mango salad.
