Hi, I'm Michelle Dudash, Author of Clean Eating for Busy Families. And today, I'm going to show you how to make a Cuban mango salad. So, the first thing we're going to do is cut our mango and cutting a mango is actually very simple to do. So, you put the mango on the board, stem side down and remember that there's a long flat seed in the middle. So, we're just cutting on both sides of that seed, about one quarter inch from the center. And that's going to give us two mango cheeks. Then what we do is take a paring knife and we're just going to score like a checkerboard, just be careful not to cut through the skin, that's going to make taking the mango out and a lot easier. And the size of the checkerboard is going to dictate how big your chunks are. And we're going to make ours a nice bite size piece of mango there for our nice salad. And then we just take our spoon and scoop it right out. So, couldn't be really any easier than that, I don't think so. You could even right, right on that skin if you wanted to. It's juicy and delicious. And the mangoes in this salad really add a great flavor, great beautiful color. Okay. So, that's our diced mango. Now, we go to the other, other ingredients. We have some black beans, we have some diced jicama, some red bell pepper, some agave nectar, some cilantro and lemon juice. And all we do is add that into our bowl. Now, when it comes to black beans or any beans for that matter, I do like to use the can; it just of course is very simple and if you rinse your beans, you actually get rid of a significant amount of the sodium. So, it's going to make your salad healthier. Alright. And now we just toss this altogether. And I like to use agave nectar in recipes. It actually has a lower glycemic index than a lot of other sweeteners out there and of course, it tastes delicious. So, we have beautiful colors here. And this is our Cuban mango salad.
