Hi, I'm Michelle Dudash, Author of Clean Eating for Busy Families. And today, I'm going to show you how to make a mango noodle salad. Mangoes have a fresh flavor and wholesome and satisfying taste, plus they're nutrient-rich, free of fat, cholesterol and sodium. The first thing we're going to do is make our peanut vinaigrette. So, we have creamy peanut butter, soy sauce, sesame seed oil, white vinegar, ginger, chili sauce and raw sugar. So, all we do is just add this to the bowl. Now, the flavors in this are so amazing. We have the fresh ginger that just really adds a kick. We add just a touch of sugar because that's going to add balance to the whole dish and I love using chili sauce, just adds a great flavor. And now, we just whisk this altogether. Now, if you like a little crunch, you could actually use crunchy peanut butter in this. But, the creamy peanut butter is just going to give you a nice smooth consistency. So, we just keep whisking that until that looks about right, it's pretty evenly distributed there. And then we just add it to our noodles. Now, with the noodles, I like to use spaghetti, but you can really use, you know, whatever kind of noodles you like. And I'm using a whole grain spaghetti noodle here, but if you like rice noodles, you could use that. It's, it's really whatever, whatever suits your palette. And now it's time to add our vegetables. So, we have some red pepper, we have diced mango and we have scallions and cilantro. And then we just add those to the bowl. So, you can see this has a gorgeous color. We have the green, the reds, the yellow, it's just beautiful. And then we just toss this altogether. So, you can make this in advance if you wanted to, makes a great lunch, great for the warm weather season. And you just toss until it's well-combined. And here's our mango noodle salad.
