Good afternoon, my name is Jason Tilmann, executive chef here at Triomphe Restaurant and The Iroquois Hotel, 49 West 44th Street, between 5th and 6th Avenue in New York City. What we've got going on today is we're going to do sauteed bok choy with sesame seeds. You can go ahead and use this for a side dish, you can use it as a accoutrement to a main entree whether or not you want to put pork on it, chicken, beef, fish, whatever you want to do, it's great. So lets get started. Okay so we have a nice hot pan, we're going to go ahead and use a little bit of extra virgin olive oil, alright. And we have our baby bok choy. I have baby bok choy. if you don't have baby bok choy, look at this, it's beautiful, it's the small baby heirloom bok choy. If you don't have baby, you can use regular bok choy and go ahead and wash it and cut it.. Okay, look at that. Now you've got to remember that this goes ahead, it cooks down quite a bit. So I'm going to use quite a bit okay. Medium high heat, let it get in there and start cooking. We're going to hit it with a little bit of salt and a little bit of pepper, alright. And we're going to give it a nice little toss, alright, look at that. The bok choy itself has quite a bit of moisture in it okay so a little bit of oil I use, that's it. We're going to cook that for about a minute, a minute and a half, and then we're going to go ahead and add our next step. Nice, starting to get a little color on it. I add a little bit of butter, pull it off the flame, a little bit of butter and that's going to add a little smokey flavor to it, a little nutty flavor to it and we're going to add a little bit of chicken stock, just to moisten it up just a touch. That's it. See how it's starting to wilt down? Look at that, beautiful, then we're going to add our toasted sesame seeds. I'm going to go ahead and cook those for just a minute so we can get that nuttiness out of those sesame seeds. We're going to re-season them with salt and pepper and we're going to go ahead and plate it. Okay, so there we go. We're going to go ahead, see how easy that is? We're going to go ahead and plate these, alright, just like that. Just like that, beautiful. Okay, and what we're going to do is we're going to finish this with a few more toasted sesame seeds and we're going to use a little bit of sesame seed oil drizzle. And that's it, there we have our sauteed bok choy with toasted sesame seeds. I'm Jason Tilmann and we'll see you next time.
