Good afternoon. My name is Jason Tilmann, executive chef here at Triomphe Restaurant in the Iroquois Hotel, 49 West 44th Street, between 5th and 6th Avenue in New York City. Today guys we're going to go ahead and make smoke salmon and brie cheese omelette. Phenomenal. Take your left over smoked salmon, your lox, you could use smoked salmon or lox if you have them and we're going to go ahead and make an omelette. It's super, super easy, really simple and fast. It's eggs, smoked salmon, and a Camembert brie cheese. Come on over to the stove. OK. So now what we got is a hot pan. We're going to use a little bit of clarified butter. If you don't have clarified butter you can use oil. You could use canola oil, extra virgin olive oil. We're going to go ahead, I have a non stick pan, because I really don't want my eggs to stick. All right. We're going to put a little bit of smoked salmon in there that I have just taken and diced up. All right, really simple. This is easy, simple, fun and tasty. Give it a little bit of a toss, all right. We have whole eggs, these are just straight whole eggs. If you don't want to use whole eggs you can use egg whites, egg substitute. We're going to go ahead and put those in there. Oh, look at that, just like that. A little bit of salt, and a little bit of pepper. Not too much because the salmon is very salty itself, OK. We're going to go ahead and kind of fold our sides in and in, just like that. And look at that, it's so easy. Once you, this takes about three minutes and we're done. All right. You gotta look at our heat, nice and medium heat, not too hot. Just like that. All right. This is our challenge, this is our time. We gotta go over to flip. This is where you make or break the omelette. All right. I tend to kind of come up and whoop, just like that. I make it look a lot easier, I'm sure. But that's the way it's supposed to be. All right. We're going to add our brie cheese, OK. And what's going to happen is you could put in the oven at this point if you'd like. But what I like to do is I like to let the heat from the egg, melt that cheese. OK. And what we're going to do is we're going to go ahead and fold it over, whoop, just like that. And roll it, just like that. And there, now we're going to go right over here and plate it. OK. So here's our omelette. We're going to go ahead and put this omelette right on our plate. Look at that, so simple, easy. All right. We're going to go ahead and add some fresh chopped chives, a little bit of these micro greens, all right and a little bit of extra virgin olive oil. You can do this for breakfast, you can do this for dinner, you can do this for lunch or a snack. It's a simple, easy smoked salmon omelette with brie cheese.
