Hi I'm Chef Mariko. Today, I'm going to show you how to make curry soup with potatoes, chestnuts, peas and coconut milk. To get started you'll want to make your broth mixture. First add four cups of vegetable or chicken broth to a saucepan. Then you want to add one tablespoon of your favorite curry paste or powder. Today, I'm using a Thai style green curry paste but you could use red curry, panang curry, even an Indian curry powder would be delicious in this recipe. Now I'm going to add one small can of sliced water chestnuts, four small potatoes cut in cubes, four small potatoes cut in quarters and about a cup of snow peas. Now I'm going to add the rest of my curry ingredients. I have two tablespoons of Asian fish sauce and if you don't have fish sauce you could use some soy sauce or Tamari to give it a little bit of salt, the juice of one lime squeezed, a teaspoon of brown sugar, then a can of coconut milk. Now I'm just going to stir everything together and let sit over medium heat for about 10 to 15 minutes. It's been about 15 minutes and my curry soup is ready to serve. To garnish, you could use a little bit of green onions, some fresh sprigs of basil and some sliced cilantro.
