Hi, I'm Chef Allen Susser. Welcome to Allied Kitchen & Bath. Pleasure to be here with you. We're going to make a mango sauce, actually this mango sauce is one of my favorites. So, welcome here. We've got mangoes, we've got spices, we've got lots of flavor going on. So I'm going to start off right here in, in our pan because I want to start this sauce with getting some aromatics going on. These are going to use, be spices, I'm going to take is a little bit of cinnamon and crack that right in to the pan, okay just a couple of pieces of cracked cinnamon as well as some star anise, this is a beautiful spice, look at that, it's great, just crack that in there, cinnamon, anise, big aromatics, this is going to start our sauce right there. It's going to be nice and easy, very flavorful. What I've got is some mangoes, okay mango is a wonderful, my favorite dish, my favorite food, this mango I put it in my hand I smile because this is the most popular fruit in the world, but this is great for eating out of hand or making a sauce. This sauce that we're going to make today is great on grilled chicken, grilled fish, shrimp, lobster anything like that, it's got a lot of flavor and you'll see it's going to be pretty easy to do. So, for our mango we're going to take it and dice it, which I actually already done and I've got some dice mango right here. Okay, going to add in our mango here and get this cooking. To the mango what I'm going to do is add a little bit of citrus because a little bit acidity to balance out the sweetness of the mango, we don't want this sauce to be too sweet, so we've got a little bit of acidity going on here as well we're going to add in a little bit of curry powder. Okay, so we're going to take that add in that curry powder. Curry powder this is a yellow curry powder, so it's not hot, but what I want to do is coat the mango with this as well as coat the spices and cook the curry powder, so that's kind of what we've got going on here. It sort of drys up as the, picks up the moisture, leaches out those flavors. To this I'm going to add a little bit of mango puree, to that as well as some coconut milk. Okay, so we've got some nice coconut milk there as we mix that you'll see flavors come in the coconut milk turns yellow from the curry, we've got all those flavors. We're going to leave those spices in there, kind of unusual, we're going to leave these spice in the because I want the sort of like flavor treasures, that are going to go on here. This sauce comes together real easy, what I'm going to do is add in a little bit of fresh greens, so some fresh chopped parsley, fresh chopped cilantro and also a little bit of crushed red pepper because I want a little bit of heat. So we've got that going on. So I'm going to take the curry sauce off, about minutes of cooking on that and look at that great, great flavor. Okay, so we've got that mango sauce. Now to finish this I'm actually going to take a little bit of scallion, just really, just a little bit of scallion cut fresh, right on top and here's our flavorful mango sauce. Lot's of big flavors, this is great on grilled shrimp, lobster, chicken even a steak would go really well with this mango sauce. I'm Chef Allen Susser. A pleasure to cook for you.
