I'm Chef Egg with Cooking with Egg TV out of Baltimore, Maryland, and I'm going to teach you guys at home how to make Pad Thai. We're going to start out with some beautiful brown rice noodles. Stir fry that with a little bit of garlic and scrambled egg. Make a beautiful sauce with three tablespoons of lime juice, two tablespoons of white sugar, a tablespoon of fish sauce, fresh jalapenos and some beautiful tamarind paste. And then, we're going to top our dish off with a quarter cup of green onions, quarter cup of peanuts, about a third of a cup both of red bell pepper, fresh crunchy bean sprouts and then we're going to top everything off with some awesome fresh cilantro. All you need to cook this brown rice noodles is to put them in some hot water and let them soak for about five minutes. Now, it's time to create our homemade Pad Thai sauce. We're going to start out with some of our lime juice, it's going to give us our sour flavor. And we're going to balance that out with some sugar and we're going to add some fish sauce and it's going to give our sauce a really wonderful depth of flavor. We've got some hot jalapenos; we're going to add some tamarind paste. Now, this ruby colored paste comes from Northern African and Asian cuisine. It's actually a little berry that they cooked down and this is going to give our Pad Thai a really beautiful color. So, mix this up until the sugar is dissolved. So, our Pad Thai noodles have soaked for five minutes; if you overcooked them, they can get really really gelatinous. So, what we do is we take them out after five minutes, rinse them under cold running water to get that extra starch off and you got this beautiful noodles that we have right here. Now, it's time to wok and roll. So, what we're going to do is put our wok over medium heat, add a little vegetable oil, about two tablespoons. Looking good. We're going to toss in some garlic; let that cook for a minute. We're going to crack an egg right in our wok and start to scramble it up. And now looks beautiful. Throw in our rice noodles, toss these around for a minute, let them cooked through. And now we're going to pour in our sauce. Get all that tamarind in there and just cook this for a minute. We want the noodles to be slightly glazed with the sauce. Smells awesome. Take our plate over here; here we go. Put some Pad Thai on that plate. Now, the Pad Thai alone would be fantastic. But, when you top it off with some green onions, little red bell pepper, bean sprouts and my favorite, the peanuts, you got something really fantastic. But, we're not quite done because we're going to do a little squeeze of lime right on top and do some fresh chopped cilantro right on top. I'm Chef Egg and that's how you make Pad Thai.
