I'm Chef Egg with Cooking With Egg TV out of Baltimore, Maryland, and I'm going to show you guys at home how to make a curry chicken salad. Now for this recipe we're going to use some creamy mayonnaise, and mix that up with a little pinch of cayenne pepper for heat, and then add a little bit of curry powder for color and a really big flavor. Once we mix that dressing up we're going to add our chicken green apple for a little tart flavor, some crunchy sliced almonds. Going with that crunchiness we're going to add a little bit of celery and then top it off with a little bit of dried apricots. A little bit of salt and pepper and a little squeeze of lemon on top of that and we're going to have a fantastic salad that we're going to top on some toasted sour dough bread. We're going to mix this dressing up first. So we've got the mayonnaise in the bowl, add our cayenne pepper, curry powder, a little squeeze of lemon, give it some kick and a little bit of kosher salt and fresh cracked pepper. This is going to make a wonderful dressing for our salad. So mix this up. Now once that's mixed up we're going to add our chopped cooked chicken, about eight ounces. We've got a quarter cup of sliced almonds, a third of a cup of green apples, a quarter of a cup of crunchy celery, and a quarter cup of chopped apricots. And we're just going to toss this together. That looks awesome. So we've mixed up our salad but I gotta taste it to see if it's any good. Mm. That's really awesome. It needs a little more fresh pepper, another pinch of salt and a good squeeze of lemon to bring out all those awesome flavors. So let's mix that up, and serve it right in the middle of some awesome toasted sourdough bread. That looks awesome. All right. We did all that work and now it's time to taste.
