Hey, everybody. This is Chef Mareya with EatCleaner.com, and today, I'm going to show you how to make a healthy Mac and Cheese with vegetables. So, I'm going to show you how to assemble all this. I've got non-fat Greek yogurt, and I've got two cups of low-fat low mozzarella, I've got some low-fat goat cheese. I've got my butternut squash that I've already precooked and then, I've got brown rice pasta. Now, you would never know by looking at this, that this was made from brown rice. Super high in fiber, low glycemic index, and for people who are trying to watch their carb intake, this is a better alternative. It's got a little bit more substance to it than the white flour pasta. And then, some seasonings, I've got a little bit of nutmeg, which plays beautifully with the butternut squash, some sage, a little bit of black pepper and some kosher salt. So, let me show you how to bring it altogether. In the food processor, I'm going to combine the yogurt, again, this is non-fat Greek yogurt. Then, I've got my low-fat mozzarella, this is part skim. Everybody's going into the soup here. And then, I've got goat cheese, now, I'm not going to use all this, I'm probably just going to use about half. And this one has herbs already incorporated in it. So, it's kind of a nice, added bonus. And then, I'm going to take my precooked butternut squash, you want to cook this until it's fork tender. And we're going to process this until smooth. This is going to be the cheese sauce basically, for our Mac and Cheese. O.k., so, I've got my brown rice pasta already precooked, I'm going to add my cheese mixture that has my secret ingredient, butternut squash. This helps to really boost the nutrient content and cut down on the fat. So, you can still have your Mac and Cheese and eat it too, and not feel guilty. I'm all about guilt-free indulgence when it comes to food. Alright, it's time to plate up my Mac and Cheese with veggies in there, oh, looks so good, so stretchy and yummy, gooey, got to have gooey Mac and Cheese, look at that. I'm going to finish it off with just a little bit of my nutmeg, give it a pretty color. Because like I say, you always eat with your eyes first.
