Hey, everybody, This is Chef Mareya with, and today I'm going to show you how to roast carrots with fresh ginger. So I'm going to show you how to first wash the carrots. Now I've got a nice hand full here, you can see they haven't been washed yet, they've got that filmy residue, the great thing about carrots though is when you wash them properly you don't need to peal them because there's a lot of fiber, vitamins and minerals in the peal, so you don't want to get rid of those, you just want to wash them thoroughly. I've got The Eat Cleaner Fruit and Vegetable Wash and I'm just going to spray these, kind of rub them down a little bit if you have a veggie brush you can also get in there and clean them even more, but The Eat Cleaner is going to do a lot of the work for you, I'm going to let this sit for about 2 minutes and then I'm going to come back and show you the difference between this and this, you're not going to believe your eyes. Alright now I just washed this hand full with The Eat Cleaner Fruit and Vegetable Wash versus this, you can see I didn't even have to peal these, it totally took all of that filmy residue off, they're beautiful, clean. And you don't have to get rid of the peals because that's where so much of the fiber, vitamins and minerals are, works great. So I'm going to just rough chop these, I'm going to chop the ends off and with the carrots you don't have to cut them too fine because you like to have the bite of a bite of carrot in there so I'm going to cut about oh an inch and a half pieces. Now I'm going to roast these in the oven, but what I'm going to do first is I'm going to get them a little bit softer and caramelize them on the stove first. And I found this great product that I love that really adds a lot of flavor, this is a vegan butter and it's a cinnamon flavor. Cinnamon with the ginger and the carrots and again fabulous combination. Alright I've got my vegan butter cooking here, I'm going to add in my carrots, get that great smell, that combination of cinnamon with the carrots in there. So I'm going to get these just a little bit softer and then they're going to go into the oven. And I've got my ginger already this is pre minced and I'm going to add about a teaspoon in of the ginger, a little bit goes a long way. Eyeball that and then we're going to mix this around here. Okay look at how pretty those are, I've got the nice bright vibrant color and I told you, you eat with your eyes first so it's got to be pretty. Alright I'm going to take my carrots, I've gotten them playing here with the ginger and my vegan butter and I'm going to just, this is enough for maybe two people here as a side dish. I'm going to add my butter and into the oven they go, I'm going to roast these, I'm going to broil them at a high heat for about 5 minutes and we'll see what they look like when they come out. Alright I just took my roast carrots out of the oven, they smell so delicious, this makes a super simple side dish, goes really nicely with poultry and if you don't eat meat you can serve this along side a veggie burger, so delicious, so nutritious and so simple.
