Hey, everybody. This is Chef Mareya with, and today I'm going to show you how to make a vegan carrot soup with grapes. So I'm going to start with my onions which I've got cooked over here, I have just browned those a little bit in my vegan butter, no saturated fat in that butter and I'm going to add this to my blender and the great thing about this dish is most of it is going to get done in the blender. Having a really efficient strong blender is one of my favorite tools in the kitchen. So I've got my onions in there I'm going to add my carrot and I'm going to save a little bit of this because I'm going to make a little relish to top it off so I'm just going to save a couple spoon fulls, so I've got about two cups in there, roughly. Now I'm going to add my avocado and for vegans especially it's really important to get your essential fatty acids and avocado is a great way to do it and it's really easy to incorporate avocado into so many different dishes. So I've got, I'm going to put in the whole avocado because it's kind of small. Alright and now I'm going to add in my liquids so I've got my coconut milk and I'm using a nonfat plain coconut milk, I've got about a cup of that and about two cups of vegetable broth, so let me get this blended. Okay, I'm going to return this back to the pot, it's nice and thick and creamy, I am going to add in just a little bit of corn starch and this is going to thicken it up just a, just a little bit further, I like to have a thicker soup for this one. Add a little bit of fresh lemon and you could even serve this soup just chilled kind of like you would serve a chilled potato soup, you can do the same this with this one. So I'm going to heat this up and I'm going to season it while it's on the stove here. Okay so I'm going to add a little bit of fresh ginger and this ginger is already pre minced, I'm going to use about a tablespoon and I'm going to season it with just a tiny, tiny dash of Kosher salt, bring out some of the flavors and now while this heats, I'm just going to heat this on low for about three minutes. While I do that I'm going to make a little grape relish for you. Take my chopped grape and I'm going to combine this with a little bit more of that fresh grated carrot that I reserved from the start and then I'm going to throw in some fresh grated unsweetened coconut. Oh yea! The coconut is going to bring out the flavor of the coconut milk that's in our soup too. How pretty is that? You might not think about combining these flavors, you're going to be blown away on how good this tastes. And I'm going to take a little pinch, get in there with your hands and top off my soup.
