Hey, everybody. This is Chef Mareya with And today, I'm going to show you how to make a cauliflower mash with Greek yogurt. Now, before you say, eh, cauliflower is a replacement for potatoes, because you save over a hundred calories of serving. So, it's really great trade-off, and I'm going to show you how to make it delicious. I've got some fresh cauliflower, and I've boiled until it's still got a little bit of firmness to it, it's a little al dente. Then, I have some plain, non-fat Greek yogurt, some of my Earth Balance Buttery Sticks, I also have some potato starch. Now, this is going to give just a little bit of a flavor of potato, without the calories and it's also going to give it a little firmness. And I'll show you how that works. And then, I've got some fresh garlic, and some seasoning, super simple. So, let's start, I'm going to just get right into the food processor. So, in goes my cauliflower, my butter alternative and then, your non-fat Greek yogurt and I put in about, oh, I kind of eyeball it, but about a cup to start. And then, depending on how creamy or maybe solid you want them, you can adjust that accordingly. You can even add a little bit of milk or non-dairy milk to that to make it creamier. And I'm also going to add in some fresh garlic, you can't have a mash without garlic. Now, I'm going to just throw in some seasoning, I've got some fresh ground black pepper, and I eyeball this too, but probably about a teaspoon and then, some kosher salt, just a little bit. I like to not over salt my food, it's not good for you anyway, but just a little bit goes a long way. O.k., now, you're going to process your mash for really as long as you want to go, because it's really about consistency, this is a very personal thing. I personally like it really creamy. So, I'm going to add in just a little bit of the Greek yogurt and that magic ingredient that I was telling you about, the potato starch. This is going to add a little bit of potato flavor and it's also going to give the mash some nice body. Clean my hands off and then, let's get processing again. Oh-oh, look at that, I'm going to add a little bit more salt, just a little bit more pepper, and I think, we're done. And I'm going to show you, the consistency of this is amazing. O.k., I've got this really gorgeous, creamy cauliflower mash with Greek yogurt. This is light, so flavorful, makes a great side dish and so nutritious. I mean, you're saving half the calories per serving, over potatoes, isn't that pretty. So, super simple way to make cauliflower mash with Greek yogurt.
