Hi, Chef Alan Carlson, Italian Chulas Restaurant, Oakland, California. Today, I'm going to show you how to make an Ahi tuna cone as an appetizer. So we take some wonton wrappers, wrap them around, try to get the point as tight as you can on them. We're going to make some guacamole and then we're going to dice the ahi tuna and make the tuna into a pokie style. It's going to have some aioili on it, sesame oil and a little chilies for some heat. So these will go into the basket and it will fry in about 35/40 seconds. We've got some that are already cooked, they come out nice and crunchy, stand them up in a glass. So I pipe the bottom two thirds of it with the guacamole. The tuna we added a little aioli, sesame oil and some Sriracha chili and that gets piped on top of it. You do a nice quarter inch, eighth inch dice on it. Then we finish it with a little smoked salt on top and some toasted sesame seeds for color. And that is our Ahi tuna cones.
