Hi, I'm Chef Barbara Mattaliano from Goose Valley Natural Foods. Today, I'm going to show you how to make Mediterranean rice. My first dish, I'm going to take a tablespoon of butter and I'm going to melt it for our almond rice pilaf. I've melted here a tablespoon of butter and I'm going to take a cup of golden raisins and I'm just going to re-hydrate them in this tablespoon of butter for a quick minute. Just give them a stir and then, I peeled and sauteed one eggplant that I'm going to add to that and then I also chopped up a half an onion and sauteed it. So, I'm going to add to the golden raisins the onion and the eggplant and I have four cups of cooked brown rice fusion blend that I added a cup of toasted pine nuts and a cup of pistachio nuts. If you're allergic to nuts, you can leave them out, that's okay. You can stir this all through; let's get this out. And then to this I'm going to add the brown rice with the pistachios and pine nuts right inside. I'm going to mix it altogether and then I'm going to season it with some all spice, some cinnamon, some salt and pepper. And it's going to be my version of an almond rice pilaf. Hmmm, smells so good! Just let that heat through. So, I have here a half a teaspoon of all spice and a half a teaspoon of cinnamon. I'm going to sprinkle that on top and then we're going to give a generous season of salts and a little bit of black pepper. And I just have this heat on, you know, medium and I'm just heating the rice through. So, this is a great make ahead, you make the rice ahead; you can use leftover rice, if you have a leftover in the fridge. You know, take out, you drop, you know, two of your favorite nuts or any dried fruit; you can use apricots, golden raisin; make your own pilaf. And you know, I added the, the all spice and the cinnamon, but you can have whatever spice you would like as well. And there you have it, our almond rice pilaf.
