Hi, I'm Diane Hoch from the Food Evolution. Today, we're going to be making a healthy lunch for a crowd. This is a beautiful lentil and arugula salad. We're gonna use lentils, we are using sitting on top of a bed of arugula which is a beautiful dark leafy green, onions, currants, carrots, walnuts, fresh parsley. We have a ton of beautiful spices here so pretty, cinnamon, nutmeg, cardamom, coriander, turmeric, cumin, salt and pepper. So first we're gonna use apple cider vinegar, we're going to be using a little maple syrup so while you know vinegar is a little tart here we have something sweet to go with it, here's all the different spices that go with that. A little olive oil because after all it is a dressing and then I use a stone ground mustard so we have cinnamon, nutmeg, cardamom, a lot of Indian spices in this dish but you know cumin, turmeric, great spice, all these spices are so good. Oh my gosh it's starting to smell delicious, coriander. Coriander's actually the seed from cilantro, we have black pepper and sea salt. So here we have this, look at the color on that, this lovely seasoning that we're going to season our lentils with that we're whisking up really nice. We're going to add our lentils in here and again these are cooked. So I use 2 1/4 cups really doubles in size which is nice. We are talking for a crowd so it's good. I like to use forks you know to really toss the lentils because when you're tossing the dressing in you don't want to kind of mush them up you want to toss them up. Red onion, I love red onion it's nice and sweet and of course very cleansing for the blood we know it's so good. These are currants and currants are nice a little change from raisins and I enjoy them, always have to add color not to mention some Vitamin A, beta carotene. Some more protein, walnuts, great source of protein nuts and always a dark leafy green vegetable, I seem to love those. Parsley is full of calcium, fiber, phytonutrients, my gosh look at the colors on that. This is such an easy salad take a look at what we did, you know so you have the spices in your cabinet, you have colors, relatively inexpensive as well. This beautiful vegetarian dish definitely can do it on a budget for sure. This smells so good for sure and there you go, we're going to have arugula with this, high in protein, fiber, iron, phytonutrients. This is so good for you I smell the spices.
