Hi my name is Chef Olivier Rousselle. Welcome to the Luxe Sunset Boulevard Hotel. Today, we're going to be making some whole wheat oatmeal refrigerator cookie. This is what it looks like, the finished product. Very healthy. And we're going to go over the ingredients. This is some whole wheat flower, brown sugar and white sugar, some butter, good quality butter, an egg, nutmeg and cinnamon, a little baking soda, raisins, oatmeal, nuts. So here we have pecan, pistachio and almonds. So we're going to start the first step in the food processor and then we'll finish it by hand. You don't want to work it too much, otherwise the dough will be tough and you wont have nice and chewy cookies. So lets start by the flour. Put the flour in the food processor, we'll put the butter also, sugar, the spices, the egg. You want it to look a little bit like that, a little bit coarse if possible. So I'm going to transfer it into a bowl and work it by hand now. So we have our bowl here and we're just going to mix all the ingredients by hand. Because we don't want it to go through the, you kind of want it chunky, you want all these pieces to come together, you don't want it all processed. Now we pull out the baking tray and basically make a little ball of dough, however big you want them. You can make them very big if you like that. Or a little bit smaller. We tend to make them medium sized. You roll them up like that, then you know, just hold them down a little bit to give it its final shape. And basically we're going to bake them for 15 minutes for about, at about 375 degrees. And they are ready to enjoy. Thank you for watching. This was Chef Olivier Rousselle from the Luxe Hotel.
