Hi, I'm Chef Olivier Rousselle. Welcome to The Luxe Sunset Boulevard Hotel. Today, we're going to be making oatmeal cookies with rehydrated raisins. Here is the finished product so you can make them either size you want. Some people like them very big. We kind of like them medium size so you can sample more. So these are all my ingredients, some flour of course, some butter, sugar, brown sugar and white sugar, oatmeal, the raisins have been rehydrated in water for the past hour, just so they come back a little plumper and basically make the cookie a little less dry. Then an egg and some spices. Here we have some nutmeg and some cinnamon. So basically you can do all that in the food processor which I'm going to do right now, sugar, oatmeal, the flour and butter and the spices. And we'll save the raisins for the end because you don't want them all chopped up in there so you just add them at the end, you drain them a little bit from their water and just mix them at the very last minute. It should look a little bit like that, still moist but easy to work with. So here is the dough that I made earlier on. What works really well if you want to portion them the right way is to roll them into a little log and basically break off little pieces of it, however big you want them. So roll them between your hands like this, put them on a baking tray with parchment paper. You can flatten them a little bit it will let them cook, you know, a little bit better. Here you go. Get them flat and then basically bake them for 15 minutes at 375 degrees and this is what they will look. Thank you very much for watching. Ingredients: -1/2 c. unsalted butter, softened -1/2 c. sugar -1/2 c. dark brown sugar -1 large egg -1 tsp. vanilla -1 c. all-purpose flour -1/2 tsp. baking soda -1/2 tsp. baking powder -1/2 tsp. kosher salt -1 tsp. cinnamon -1/4 tsp. nutmeg -1 1/2 c. oats (not instant, but quick-cooking are OK) -3/4 c. raisins (re-hydrated first with hot water and drained) Bake 15 min at 375F
