Hi, this is Chef Olivier Rousselle. Welcome to the Luxe Sunset Boulevard Hotel. Today, we're going to make Parmesan cheese filling for rolled cookies which you can see the finished product here. So basically for this recipe we're going to use a little bit of puff pastry. You can of course, make it but these days you find some really good ones in the market. Here we have a little bit of fig jam just to sweeten it a little bit. So we're going to use cream cheese, egg yolk and Parmesan to do this. So basically we're going to mix the cream cheese and the yogurt together and then I'm going to add the Parmesan to it. You can even shave a little bit more on top, there you go. And we're going to spread it on this piece of puff pastry like this and then we're going to add a little bit of the fig jam just to make it a little bit sweeter. You don't want to pour it too thick because you're going to have to roll it afterward. So we're just going to add a little bit more jam to the top, not too thick because you're going to want to roll the cookie over so it's got to be as thin as possible basically. So you want to fold it into quarters so the top quarter fold it up and then fold the bottom quarter basically into halves and then basically you want to fold the whole thing over as to give it like a heart shape. So here you go and then you just want to, when it's like that you want to let it rest a little bit and then you want to cut a little heart shape cookies like that and basically when it cooks it's going to spread so it's going to make a little heart shape. I've made a few here just to show you. So basically you put this in the oven for about 12 minutes at 375 degrees and they're going to start spreading out nicely like this and you can put any filling you want inside but this is a good way to add cheese and to still make it a little bit sweet but not too sweet.
