Hi, I'm Chef Olivier Rousselle from The Luxe Sunset Boulevard Hotel. And basically today we're going to make cookies using fruit purees. Just like here, we've made some mini cupcakes using apple sauce. This way, we don't use as much sugar of course. So, let's go through the ingredients. This is basically almond meal, this here a little bit of butter, we've got our eggs, a little brown sugar, yogurt, oatmeal, a little bit of oatmeal, the applesauce, flour to basically bind everything and the oil. So, basically I'm going to run everything through the, the whisk and we're going to put it in those little pan mixers and just mix all. So, we're going to start with the eggs, start putting the eggs first and you're going to gently add the sugar, the almond meal, butter, oatmeal, yogurt, applesauce and finally the flour. Put a little bit of oil to make it creamier. Basically you have a creamy consistency using all the ingredients that you've seen. And I'm basically gently going to fill those little muffin tins; three, three quarter full is probably a good, a good thing. And basically bake it for 12 minutes, 375 degrees. And basically, when they come out, you can dress them however way you want. Here we use a little bit of fruit puree on top and some colored sugar just to make it look, look nice. So, enjoy.
