Hi, I'm Chef Mariko. Today, I'm going to show you how to make coconut milk from coconut flakes. To get started, you're going to need two cups of unsweetened shredded coconut and some cheesecloth. First you want to add your two cups of unsweetened coconut to a saucepan. Then you want to add four cups of water. Stir it together and you'll want to bring to a boil over medium heat. After it's come to a boil, let it sit for between one and four hours. This gives an opportunity for all the coconut flavors to leech out into the water. After my coconut and water came to a boil, I let it sit for about three hours. Now I'm going to strain out the coconut flakes. You'll want to get a bowl and then put a strainer on top of it and then you can line it with a piece of cheesecloth or if you don't have cheesecloth feel free to use a clean dish towel. Now, I'm just going to pour the coconut mixture through the cheesecloth. Now you just want to gather up the coconut and squeeze the remaining milk. This is going to be the rich and creamiest part of it. This coconut milk will last in the refrigerator for up to seven days.
