Hi, I'm Chef Mariko. Today, I'm going to show you how to make crackers with spelt flour. This is a really great method to make your own splet crackers at home and it only takes a couple ingredients. First, you want to get a half cup of cold water, and add a half a teaspoon of salt to dissolve. Then, I want to get my mixing bowl and add one and a half cups of spelt flour. You'll want to have a little extra spelt flour on hand, for when you're rolling out the dough. Now, just add the half a cup of water, make sure you get all the salt in there. And then, mix until combined. Now, I just want to get a piece of parchment paper to line my baking sheet. This helps prevent the crackers from burning and sticking. Now, just sprinkle a little bit of your spelt flour on the parchment paper. Then, we'll want to add our ball of dough, put a little bit of flour on top. And then, we're just going to kind of move it around the baking sheet. If it starts to feel sticky, add a little bit more flour. And then, you want to press it pretty thin, so you can either use your hands or a rolling pin. Or, today, I have another baking sheet that you can use just to press on top, o.k. I'm just going to spread them out a little bit thinner. If you wanted to make round crackers, you can individually roll out little marble size rounds of dough. But I'm just making one giant flat bread cracker, today. Now, you can garnish with your favorite toppings. You could use some different types of caraway seeds or sesame seeds. Today, I'm just going to do a sprinkle of poppy seeds, I love poppy seed crackers. Before you bake your spelt crackers in the oven, you can score them. This helps them breakup easier when they come out of the oven. You can use a knife or a roller. But I'm just making some rough, square type shapes. Now, I'm just going to use a light brushing of olive oil on the top of the crackers, to help keep the poppy seeds on them. Alright, now, they're ready to bake at 350 degrees for 15 minutes.
