Hi, I'm Chef Mariko. Today, I'm going to show you how to make caramel corn with peanuts. To get started you will want a heavy bottom sauce pan. First you want to add a half a cup of light corn syrup, one and half cups of brown sugar, and a stick of butter. You will want to mix everything together over medium high heat until it reaches 300 degrees on a candy thermometer. While you're heating your caramel to 300 degrees you will want to get the rest of your ingredients ready because you will need to act fast. I have a parchment lined baking dish, I have a cup of peanuts, a little bit of salt for sprinkling and 11 cups of fresh popped popcorn. Alright my caramel is ready. Now I'm going to add the half a teaspoon of baking soda, mix it all together. Now I'm gong to add this to my popcorn, add your cup of peanuts and fold all your ingredients together until well combined. You'll want to gently fold everything together to keep the popcorn evenly coated and to help prevent the popcorn from breaking down. Now just spread on your parchment lined baking sheet and spreed evenly to cool. I'm just going to give it a final little sprinkling of salt and let it come to room temperature.
