Hi, I'm Darlene from CasaQ and today we're going to be making a chipotle tortilla chicken soup and I love the soup because it's a nice warm spicy soup that will heat you up on a cold night. So what we're going to use today is a 24 ounce can of tomato, one medium onion, chopped, two cloves of garlic, four tablespoons of chopped cilantro, two teaspoons of sugar, eight cups of chicken broth, one and a half pounds of chicken breasts, four chipotle peppers and adobo sauce. And then we're going to top it with Monterrey jack cheese, avocados, and tortilla chips. So this tortilla soup is so simple and easy to make. So we're going to combine all the ingredients. We have the tomatoes in there, I just put in that onion. We're going to put the garlic in. We have the chipotle peppers. This is going to be a full tank here. And then we're going to put the cilantro in and we have a little bit of sugar. Sweet it up. And then we're just going to top it off and we're going to blend it all together. And it's as simple as that. So what you want to do is cut your chicken breast and just cut it in small piece like this. Because we're going to putting this chicken in the pot to poach along with the soup mixture. OK we're going to put the eight cups of chicken broth in your pot and then we're going to add the tomato mixture and then we're going to add the chicken. The raw chicken, and what it'll do is it'll cook and poach in here. This of course is an oven safe ceramic pot. You can use a large stainless steel stock pot as well. So now we're going to put the pot on the stove to cook. Now with the super thin strips of tortilla chips, we want to just put them in a sautee pan in really hot oil and these we are going to crisp them up. So we have nice crispy little tortilla chips to put on top of the soup when we're done. And we have a little paper lined plate because we want to put them on that plate afterward so we can soak up the oil afterwards. So you want to cook them until they're slightly brown and very crispy and toasted. You can see they're very crispy, and then we're going to put them on the paper on the plate so we can soak up the oil. So now we're ready to serve the soup and we're going to make sure they get a nice bit of chicken in there and we'll put some more of the broth and then what you want to do is sprinkle a little bit of cheese on top. Be our guest. You want to put these nice crispy tortilla chips because remember it's tortilla soup. So you want to put some of these tortilla chips right there in the soup. And then we're going to top it with some avocados. So then you're just going to top it off and sprinkle a little bit of cheese back on the top, and we're all done.
