Hi, I'm Koya Webb, Author of Koya's Cuisine: Foods You Love That Love You Back. And today, I'm going to show you how to cut vegetables or carve vegetables. So, in carving vegetables, you want to make sure you're using a paring knife and the reason is it's small enough and it's slim enough for you to really get into the detail of carving. One of my favorite things to carve is a leaf and what I do is I use a cucumber and I cut the cucumber in half and then, I cut one side off of it. And then I lay that side down and I take the point of the knife and I just cut round edges on the cucumber, like so and then I flip it over and I do the same thing on the opposite side. I cut it a little bit off and then I cut a little bit more, usually it just depends on which way you want your leaf to go. But, this tends to give me more of a angle. So, here. So, I'm going to have my leaf going a little bit to the side and then you want to start at the point and you're going to really cut towards the side of the cucumber. So, we're going to start here and I'm going to angle the knife towards the side as I gently glide it back towards me. And now, I'm going to cut towards the actual cut that I already made, going deep enough to come through the other side. And then, I'm just going to take that portion and try to wiggle it out. Sometimes if you don't cut deep enough, it might not come out clean, but just cut a little bit more until it gives you a clean cut. And then, you just pick that piece out and then you have the middle cut which is the most important cut. And then from there, you just want to make small incisions on your cucumber down and then you cut towards the cut that you've already cut. So, you want to make sure that you're cutting down towards the cucumber and then your second cut is going to be towards the cut that you already made. And that's really going to bring it out. And you just take the end of the knife and that's how you pick up the piece that you've already cut. Again, cut down and then cut towards the cut that you already made and the piece comes right out. And you'll end up with a beautiful cucumber leaf. This is my favorite vegetable to carve and it's really nice and it's really beautiful. And that's how you carve a vegetable.
