Hi. I'm chef Maria Liberati, the author of the award winning book series, The Basic Art of Italian Cooking, and today I'm here to show you how to do the filling for an Italian cannoli. And what we're going to do is we're going to put in the food processor a half a cup of ricotta cheese, and if you can find fresh ricotta cheese, it's even better. And a third a cup of sugar and just about a half a cup of baking chocolate chips. But we're going to just leave a little bit to decorate the ends of the cannoli with. And we're going to just, we're just going to whirl this around till it's well blended. Just a little, not too much because the chocolate chips will break up and what we're going to do is fill our cannolis. you're going to use some chocolate chips for decoration. And you could also decorate with some powdered sugar if you would like. Here we have an easy Italian cannoli to make for any special family dinner or even for a snack.
