Hi, I'm Chef Charlie Ayers, Owner of Calafia Cafe and Market A Go Go in Palo Alto, California. Today, I'm going to make for you a non-dairy broccoli soup. When I make my broccoli soups, I like to save all my stems from my broccoli. So, I peel all my stems to, to remove most of the fiber. I'll add that to a pot with vegetable stock and I follow that by sliced yellow onions. You can use shallots if you'd like to use shallots instead; minced garlic, dried thyme; I find that the dried thyme really adds a great flavor profile to the back end of the soup, Arborio rice, this is going to help to thicken our soup so when we puree the soup later, it gives us this really smooth, creamy texture like I put a ton of butter or cream in it. We'll cook this whole pot for about 25 to 35 to 40 minutes depending on the volume of liquid and mass inside the pot. Once it's finished, I'll add in to a large blender my raw spinach, my blanced broccoli grounds and my raw dill. I'll puree that and then I'll slowly add in my extra virgin olive oil into the blender while everything is blending in the Vitamixer. Vitamixer, Vita Prep Mixer are two of the best items to use for making really smooth soup. Or you can use just a, a regular food processor. The end result is a smooth creamy dairy-free soup that has no butter, no cheese, no cream in it. You want to put this beautiful creamy rich delicious soup that's fairly healthy for you because we have no dairy products in it or whatsoever.
