Hi. I'm chef Charlie Ayers owner of Calafia Cafe and Market A Go Go in Palo Altlo, California. Today, I'm going to make for you a cold shrimp salad. Our approach to a cold shrimp salad is we like to take a wild white prawn, we poach it lightly, then we add some shaved fennel. I'll toss the fennel and the shrimp with a small amount of the honey mustard dressing, add a little salt and pepper. I'll toss those three ingredients together, Now I like to make a bed of butter lettuce and radicchio. I love the really neutral flavor of the butter lettuce with the sharp bite of the radicchio. I'll add some chopped bacon, sprinkle that across the salad, followed by diced avocado going around the perimeter of the salad. I'll take a couple of farm eggs. I like to use a soft poached for this very reason. It adds a sauce like consistency and a richness that just can't be beat. Now again, if you don't like eggs, don't add them to this salad. And I'll take the dressed prawns and fennel, place that right in the center and stack it up nice. Then I add some of the chive batons, a little bit over the egg for a little color contrast. Then I'll finish with more dressing around the outside of the salad. This is a very rich and decadent salad that I recommend sharing with your friend or if you're really super hungry, having all by yourself. This would go well with a glass of chenin blanc or sparkling wine. This is a dish that's appropriate for any time of the day.
