Hi, I'm Chef Charlie Ayers, owner of Calafia Cafe and Market A Go Go in Palo Alto, California. Today, I'm going to make for you a very popular dish on our plant eaters side of the menu called Rojo Tacos. We have a marinated firm organic tofu in a special recipe house sauce, shredded green cabbage, pulled cilantro leaves, and minced red onions. White corn tortillas, and we'll finish this dish with some black beans. Now I'm going to cook the tortillas. it's a very quick, easy dish. if you don't have a big griddle like this at home you can do it on a small electric griddle like you make pancakes on or you could even heat up your tortillas in a Panini press. If you don't have any of those pieces of equipment at home you can heat this up in the microwave for about 40 seconds. You want to make sure your griddle is nice and hot. I like to use two tortillas per taco. The heat from the griddle helps to steam the two tortillas. The tortillas heat up very quickly. As you can see they're very malleable and easy to work with now. So we like to separate the tortillas like this on the plate. We put down our black beans first. This is a complete Vegan dish at our restaurant. This dish can also be served with queso fresco or any other type of cheese at home if you're not a strict Vegan but you are a vegetarian We have the black beans down and we have our marinated roasted Rojo Taco tofu. We have our shredded green cabbage, our minced red onion. And lastly our pulled cilantro leaves. Now if you don't like cilantro you don't have to put cilantro on there. You could put fresh oregano on if you like. Or you could just put some slices of green onion. So we have our Rojo Tacos with our black beans, Rojo tofu, shredded green cabbage, minced red onions, pulled cilantro leaves on a white corn tortilla.
