Hello, I am Robert Lambert of Robert Lambert's Specialty Foods, and today I'm making a very easy cranberry orange relish for the holidays. I'm going to start with the bag of cranberries, 12 ounces and I've washed and picked them over to take out the soft ones. And now I'm going to do the orange part which is orange zest and juice and I like to have strands of peal like this in it so that you can really see them and taste them, it's not just a background ingredient but, a real forward flavor. Now the interesting, the interesting thing about citrus no matter what kind it is it's almost universal that one pound of citrus will equal one cup of juice. And I'm just going to combine the cranberries with the cup of orange juice, zest of 2 oranges, this is about 2 tablespoons and a half a cup of raw sugar, very clean. Okay I'm just going to bring this to a boil and cook it for about 5 minutes just until the berries pop and you'll hear them and they'll start to break down as soon as it boils. And you can help the process along at this point by pushing the berries against the side of the pot because you don't want any whole berries if they're really sour inside and you want to blend everything so you don't want any berries left unpopped. Takes 2 to 5 minutes depending. Great for turkey sandwiches, great for the main meal. And that is my fast and easy cranberry orange relish.
