What's up, everybody? Chef Plum back with you again from PlumLuvFoods.com, and I'm going to show you what you can make with vegetables, potatoes and eggs. Check it out. All right. So guys, check it out. This is a great way to turn last night's left overs into today's breakfast. We're going to take a little pie pan like this. We're going to put a little oil into it, just around the edges. Using my fingers I'm going to rub the sides of it. What we're actually making here is a take on a frittata. A perfect way to use leftovers. So now our pan is ready to go. We're going to put it to the side. Here's my bowl, we're going to crack about six eggs to go in here, just like this. I know you can't see in my bowl, but you get the idea. We're cracking eggs. You know if a piece of shell gets in there, there's a trick you can use by taking the actual other piece of an egg shell and sticking it in there and it works almost just like a magnet to take the shell out. There we go, just like that. Now, one, two, three, four, five, six eggs. What we're going to do is we're going to whisk these together like this, using our whisk just to mix them up. Now I've got a little leftover zucchini here from last night, that's going to go in, a little leftover squash from last night, that's going right in. Here's some potatoes from last night. These potatoes have already been cooked. It could be a leftover baked potato from last night, it could be a potato that maybe you had leftover from making mashed potatoes, that's going to go right in. I'm also going to throw some green onion in because I think it tastes good. Toss that in. Now we're going to mix that in, incorporate it in using a whisk. When you use a whisk you're actually adding air to it. You're beating air into it to help it leven, it means to get bigger. So nice and whisked up just like that. We're going to add a little salt, a little pepper, because you gotta season your food folks. You have to season your food. All right. Give it a quick little whisk again, just like that. Back to our pan and we're just going to pour it right in. Just make sure things are nice and spread out. You could add cheese to this if you wanted to as well. So don't be afraid. All right. We're going to put it in our oven. The oven's set to about 350, 400. It's going to be in there for about twenty or so. You'll see it'll start to get really tall. All right. There we have it, guys. Eggs, leftover vegetables, and cooked potatoes. We made a frittata out of it. I gotta tell you, it looks fantastic. Check it out. Look at the inside there. It looks great. There you have it guys.
