Hi, I'm Anna Maria de Freitas. I'm the owner of The Harrison House Suites, the Tucker House Inn and Kojo Restaurant in Friday Harbor, San Juan Island, Washington. Today, I'm going to show you how to make some fancy but very simple desserts. So I have a variety of cheesecakes here, some that were in a large spring form pan, some that were in mini spring form pans, some that were no bake and just show you that with a few simple garnishes you can take something ordinary and make it extraordinary. So I have a caramel sauce here and this is a mascarpone cheesecake and we're going to add a little caramel sauce and I have some pecans that I've roasted and we're just going to add a little strawberry here and just in a matter of seconds you've just transformed that very simple looking cheese into something that looks really tempting and inviting to eat. So our little three mini cheesecakes, we're going to do something a little different to them. I have some lemon curd, so we'll add a little lemon curd on just one of them. We're going to do each of them a little bit different, that's a little lemon curd and some slivered almonds that I've toasted, going to be quite nice on top of them and then I have some chocolate that I've just sort of shaved and I have a fruit sauce. I'm just going to fill up that cavity and we're going to put a little raspberry right in the middle there and mint is always a fabulous garnish just to set a little mint leaf right through the center there and I have a few little petals of flowers and then there we go, again transforming three very ordinary desserts into something that looked very inviting. This is a no-bake cheesecake, just put in a fancy glass. I shaved a little lemon zest on top and we're going to set a little raspberry there and a little mint leaf for garnish. And then some no-bake cheesecakes here. We're going to put an edible johnny jump-up right on that and then what should we do for our last one, what haven't we used yet, maybe just something very very simple, a little mint with some rose petals, kind of a little sticky. You probably need tweezers to work with them and then a little tiny mint to garnish that raspberry. That looks a little lonely over here and there we go. So I hope you can have some fun, taking your ordinary desserts, making them extraordinary and fancy just with a few simple garnishes.
