Hi, I'm Anna Maria de Freitas, owner of The Harrison House Suites, Tucker House Inn and Kojo Restaurant, in Friday Harbor, San Juan Island. Today, I'm going to show you how to make sweetened strawberries for a strawberry shortcake. So first of all we're going to start with some strawberries. I'm just going to take the hulls off, quarter them, so these are quite big so I'm going to make a few more pieces with them and then I'm going to save some that we're going to macerate int he food processor. I love strawberry seasons here in the Pacific Northwest. There are smaller berries than these California ones and they're just packed with flavor and we showcase them as much as we can at the inns for breakfast. And I'm going to add a little bit of confection sugar and a little bit of lemon zest. You always want to add a little bit of acid, that's going to make the berries weep. In my family we traditionally added a little bit of balsamic as an acid but lemon zest works just as well, there we go. Just so we have a little bit of a sauce, maybe just a few more pulses, there we go. Then we're going to mix this with our cut strawberries and you could make this in advance and you'll get a little bit more juice. So in terms of plating, so this is a short bread and I just cut it in half and we're going to scoop some whipped cream. Let's get a little whipped cream with some confection sugar and a little big of vanilla, like a little Chantilly cream and we're going to scoop some of these strawberries on top and we're going to put a top layer on here and a little bit more whipped cream and with some strawberries, there we go, a little bit of fresh mint, there you go.
