Hi, I'm chef Mariko. Today, I'm going to show you how to make potato strings. First you want to get started with some potato shreds. You can either cut them by hand with a knife. Or you could use a mandolin or a food processor. You just want to make sure that they're fine almost noodle like strings. Then you want to get a plate with about two tablespoons of flour. A little bit more if you are doing a large batch of potato strings. And a little bit of fresh ground pepper or your favorite seasoning. We don't want to make a full batter for our potato strings but the little bit of flour will help the potatoes get nice and crispy. Then just put your potato shreds on the flour mixture. And then just mix it up a little bit to get a nice thin coat. This is also going to help the potatoes from keeping separated while they fry. Okay when frying I like to use an oil like canola or peanut oil that heats at a very high temperature. My oil looks ready. Now I'm going to put my potato strings in to fry. Because these potato strings are in such small pieces it's only going to take a minute or two to fry. So don't step away or they'll burn. It's been just a couple of minutes and my potato strings are fried to perfection. When pulling your potato strings out of the oven put them on a plate with a paper towel on there to help absorb some of the extra oil. Now they are ready to serve as a garnish or with your favorite dipping sauce. I'm chef Mariko showing you how to make potato strings.
