Hi, I'm chef Mariko. Today, I'm going to show you how to boil and cut a potato. When boiling potatoes you want to stick to a waxy variety like a red potato or even a yellow potato compared to the russet variety. Russet potatoes usually have a little bit more starch to them so they don't boil up as good. To get started you'll want to get your potatoes and cut them in even size pieces. For these little red potatoes I'm just going to cut them in half. When boiling potatoes you don't want to cut them up too small. The more surface area of the potato that is exposed to water means that it's going to have more of the nutrients and the flavor leech out. So for these red potatoes I'm going to cut them in half. And then for some of these smaller potatoes I'm going to leave them whole or cut them in half. Now that I have my potatoes in a pan I'm going to cover them with cold water until it's about an inch above the potatoes. If you use cold water it's going to help prevent the potatoes from turning brown. Now I'm just going to put them over high heat for about 10 to 15 minutes. When boiling potatoes leave them uncovered because it's going to help prevent the potatoes from getting soggy. My cut potatoes have been boiling for about 10 minutes. You know the potatoes are finished cooking when you can poke them with a fork and the fork easily goes the whole way through. Now I'm just going to drain them and put them on my serving dish. And again I used a combination of purple, yellow, and red potatoes to give this dish a little bit of extra added color. To serve my potatoes I'm going to drizzle them with a little bit of olive oil, some salt, and some fresh ground pepper. And that's it. Now they are ready to serve.
