Hi, this is Amy from, and I'm here to talk about how to tell when blueberries are ripe. Right now, obviously, this is not the time of year for fresh blueberries, we're past it, headed into the winter, here North Georgia. These are rabbit-eye blueberry bushes, and when they start to, when the spring comes and they're covered with the flowers and bees, you know, it's just wonderful. And then, they start to form berries and they're just so tiny and green and white and they start to turn pink. And it's hard to resist trying them out. But you know what, pink, they're really very tart and they start to get a little darker, kind of purple. And you think, man, those are almost ready. And if you get them too soon though, they're going to be pretty sour in your mouth. So, as they go through their stages of coloring and ripening and they get a little bit bigger, they get a little bit softer. They'll turn more blue, but they have kind of a white, waxy blush on them. And that's really pretty much when they're done, they get to be a little bit plumper, a little bit softer. The good news is, if you pick a whole bunch of blueberries and if you have a bunch of ripe ones. But there's also some not quite ripe ones mixed in. And you really want it all sweet, ripe ones, instead of a bunch of sour, tart ones. If they're all pretty close, you can actually put them in a bowl and leave them on our kitchen table, overnight. If you've picked them in the afternoon and then, the next morning, they'll actually have sweetened up. And so, you will have sweet, ripe blueberries. Because if they're really, very close, they'll keep ripening for you. And so, if you make a mistake, it's not a heart attack, you can still have wonderful, sweet, ripe berries with your cereal in the morning. So, how to tell if your blueberries are ripe, partly flavor, partly color, partly the feel, if they're a little bit soft. But when you're in a hurry and you've just got a whole lot, you can just give it a little time. And the ones you've picked will still get a little bit riper as long as they're close enough.
