Hi, I'm Kevin Wray, and I'm from Peterbrooke Chocolatier here in beautiful Winter Park, Florida. Today, we're going to teach you how to make chocolate coated almonds. First, we're going to take obviously, roasted almonds. You want to make sure that these are slightly warm or at least at room temperature. If you store them in a refrigerator, your chocolate is going to come up too quickly. Next, you're going to take tempered dark chocolate or milk if you prefer and this is a pretty simple recipe but it is a little time consuming. We're just going to drizzle some chocolate over our almonds and then using a gloved hand, we're going to stir that around until we start to coat the almonds. Now you notice they kind of stick together and gum up but as you keep going and they dry, it will start to coat the almonds individually and then loosen up. And then we're going to keep adding chocolate and doing this again. So just keep moving the almonds around until the chocolate dries enough that they are not sticking together. Now you're going to repeat this step until you have as much chocolate as you'd like on the almonds. It can be just two or three times or keep going all day if you want them really thick. Now that we've got the almonds evenly coated and rolling loosely in our pan, we're going to go ahead and just lay them out on a sheet pan, make sure they're not sticking together and we're going to put them in the cooler and they'll be ready. Just eat and enjoy.
