Hi, I'm Kat Barry and I'm here at Perennial Accents in St. Jones, Michigan. Tonight, I'm going to teach you how to make a spaghetti and corn salad. I've already boiled about 12 ounces of whole wheat pasta. This is just whole what spaghetti and I boiled them and then I tossed them in a little olive oil. I obviously drained off the water as well. So they're tossed in olive oil and they've cooled so they're nice and cold. This is going to be a cold salad. This is one can of pinto beans, a 15 ounce can, also rinsed and drained. Next we're going to toss in the corn. So that's one cup corn, two Heirloom tomatoes. I'm going to put in about a fourth a cup fresh parsley. Next I'm going to throw in some nutritional yeast. So next we're going to make one of my favorite salad dressings which is a red pepper vinaigrette. I've got four ounces extra virgin olive oil here. I'm going to add about one ounce white wine vinegar. Now I'm going to put in two tablespoons of whole grain mustard and then I've got two tablespoons of crushed red pepper flakes here. You can use fresh red peppers if you've got them around as well. We also want to add some salt and pepper to this as well. We're just going to toss our salad. Um, look at that. It's got a really nice color. That's really what you want to look for when you're making a salad. You can throw in whatever vegetables you have. You just really want to watch the color array to make sure that you know, you've got a variety of colors. So here is some more parsley and you could sub the parsley for cilantro if you did want to make it a little bit more Southwest style and we'll put in a little more nutritional yeast so that's probably about a half a cup of nutritional yeast all together. Okay, ta-da, we're all set. Well that's it for the spaghetti and corn salad. Put it in little containers and take it with you for a lunch at work. Thanks for watching.
