Hi, I'm Kat Barry. I'm a huge fan of Mexican food. I spent a lot of time growing up in Mexico and I just love the spicy kick. So today I'm going to show you how to make a Mexican corn salad. I love salads and I'm really excited to teach you how to make this really easy Mexican corn salad. It has a lot of ingredients that you probably just have around your house. The first one is just sweet corn. This is one and a half cups of sweet corn. You can buy organic frozen corn or hopefully you'll make this salad when corn is in season and you can just cut it right off the cob. But anyway, we have one and a half cups corn. This is two heirloom tomatoes. We've got half a green and half a red bell pepper. You can use any kind of bell pepper that you can get around you. I am a big advocate of heirloom produce. So I usually buy heirloom peppers and they come in all different colors, including yellow, and purple and some really fun things. Now here are some black beans. This is just one 15 ounce can black beans. We've got half an avocado here. And I might add some more avocado depending on how this salad comes together and what it looks like. This is how you keep an avocado from getting brown. You keep the pit in it. So if you ever make guacamole or anything like that and you're not going to serve it till later on, stuff the pit down in the middle of your guacamole to keep it from getting brown. I have the juice of two limes. And then I've got two fresh jalapenos finally chopped. And then I've got some fresh chives here. And then we're going to throw in some cilantro. You can be fairly liberal with this. This is a little over a fourth a cup cilantro. And we'll put some pepper. I'm a big advocate of experimenting and improving in the kitchen. So that's probably about a teaspoon of salt. And then we're just going to toss this and it's very fresh and simple. It's ready to go. Well that's it for the Mexican corn salad.
