Hi, I’m chef Mariko, host of “Culinary Adventures with Mariko.” Today, I will be showing you how to make a Chinese scallion and ginger oil sauce recipe. To get started, you want to get four tablespoons of an oil that can go to a high heat, like canola or peanut oil. Today, I’m going to be using canola oil. You want to put the oil in a small saucepan. Alright, that looks like about four tablespoons. Now, I’m going to put it on the stove at low heat. First, you want to get four tablespoons of green onions or Chinese scallions – they’re the same thing – and, chop them up. So, this will be about four tablespoons. Now, I’m adding my green onions to a heat-proof bowl. Now, I want to add my garlic. This is a two-inch piece of garlic peeled. And now, I’m just going to chop it up into slices and mince it. Sometimes, it’s hard to chop up garlic really fine, so feel free to use a cheese grater if you have one of those instead. Okay, now I’m just chopping up my garlic so that it’s very fine. And now, I’m adding it to the Chinese scallions. Then, add a couple teaspoons of salt. And now, I want to get my oil off of the stove. By heating up the oil, that will pull out some of the flavor from the scallions and the ginger. Now, I just want to stir it up, and my Chinese scallion and ginger oil is ready. This is a great sauce to go on top of your favorite fish or chicken, and it also works great as a sauce for your favorite stir fry recipe.
