Hi, I’m chef Mariko Amekodommo, host of “Culinary Adventures with Mariko.” Today, I’m going to show you how to make an omelet in a wok. To get started, you’ll want to have a well-seasoned wok. Add a couple tablespoons of oil, and today I’m using a canola oil. When using a wok, you want to make sure to use an oil like canola or peanut that heats to a high temperature. If you use something like olive oil, it’s going to stick. Now, I have my two tablespoons of canola oil in my wok, and now I’m just going to put it over medium to medium-high heat. Alright, while the wok is heating up, I’m going to get the omelet mixture ready to go. A Chinese omelet is normally called an Egg Foo Yung, so it’s an omelet that has bean sprouts and green onions and different vegetables, usually with a Chinese gravy over it. First, I’m going to start with four eggs. Then, I’m going to chop up some green onions. This is going to be about a cup of green onions, but you can use a cup of bean sprouts instead, or a combination of both, or whatever other vegetables you have on hand. And now, I’m going to add it to my egg mixture with a little bit of sesame oil. This will give it flavor. And, a splash of soy sauce. Now, I’m going to mix the eggs, green onions, soy sauce, and sesame oil together until well-mixed and blended. You especially want to make sure that the egg yolks and whites are mixed together. Alright, now I’m going to go over to my wok and start the omelet. The oil is heated up, and you just kind of want to move the wok around to get a nice coat. Okay. That twirling motion with your wrist? That’s what you’re going to have to do to get the omelet perfect. Make sure that your wok is hot, and oil is heated. And now, slowly put it your egg mixture. I’m actually going to start by doing a circle around the middle. Now, pour your egg mixture into the wok. Now, you want to twirl it around the sides of the wok, because when it hits the hot sides, it starts to cook already. When making an omelet in the wok, you want to make sure not to have too much egg in there. If you do, the omelet is not going to cook fully. Alright, now I’m just twirling it around a little bit more. Then, I’m going to let it set for about 10 seconds, and then I twirl it again. You keep repeating this process until the egg is fully cooked. Now, I’m just getting a heat-proof rubber spatula to kind of just move down the sides to help remove the omelet. Now that you’ve made an omelet in the wok, you can top it with your favorite Chinese sauces or marinades. This is chef Mariko, showing you how to make an omelet in a wok. Enjoy!
